Chicken bites with Jersey Royals

A quick meal for spring

For the chicken

  • 2 chicken breasts, cut into bites
  • 1 tbsp cornflour
  • 1 tbsp rice wine, such as sake or soju
  • pinch of salt
  • black pepper

Potatoes

  • 250g Jersey Royals
  • 2 tbsp extra virgin olive oil (or any other oil)
  • 1 tbsp apple cider vinegar
  • 1 tsp Dijon mustard
  • pinch of salt

To serve

  • greens of your choice, such as tenderstem broccoli or cavalo nero, prepared in your favourite way

Method

  1. Wash the Jersey Royals and cut them in to bite sized pieces.
  2. Boil them until they’re fork tender, about 15 minutes
  3. Mix the cut up chicken with the salt and black pepper, then add the corn starch and rice wine and mix until evenly coated let sit until the potatoes are done.
  4. Prepare the dressing for the potatoes. Once they’re cooked drain and toss with the dressing while they’re still hot.
  5. Heat 2 Tbsp oil in a pan and add the chicken. Let it cook for 5 minutes on one side then flip. Cook for another 5 minutes till done.
  6. Serve the potatoes and chicken plus any other sides and enjoy.
