Jacket potatoes with beans
The proper oven method for a crisp-skinned baked potato, topped with beans, butter and cheese.

- 4 baking potatoes
- oil, for rubbing
- salt
- 1 400g tin baked beans
- butter
- 150g mature Cheddar, grated
Method
- Heat the oven to 220ºC (200ºC fan). Rub the potatoes with a little oil and salt, place on a baking sheet and bake for 25 minutes.
- Turn the oven down to 190ºC (170ºC fan) and bake for a further 1 hour to 1 hour 15 minutes, until the flesh is tender and the skin is crisp and golden.
- Warm the baked beans in a pan.
- Cut a cross in the top of each potato and squeeze the base to open it up. Add a knob of butter, spoon over the beans and top with grated cheese.
