Mayonnaise

  • 150ml sunflower/vegetable oil
  • 1 egg
  • 1 egg yolk
  • 1 tbsp dijon mustard
  • 2 tbsp white wine vinegar

Method

  1. Bring the eggs to room temperature
  2. Add the eggs, mustard and 1 tbsp of oil to the food processor (smallest bowl).
  3. Blend for 20 seconds.
  4. Drizzle in the oil
  5. Season and mix in vinegar

Notes

Keep the food processor running the whole time!

Substitute in a little olive oil for some of that peppery flavour.
