Pico de gallo

  • 4 tomatoes
  • 1 small red onion
  • 1 tbsp jalapeño peppers, or a small fresh chili
  • 2 clove garlic, crushed
  • small bunch coriander
  • 1 lime

Method

  1. Finely chop everything but the lime and mix
  2. Squeeze lime juice over it and season
  3. Leave in the fridge for 20 minutes to infuse
