Potato soup

This is really Nivi's Potaty Soop.

  • Prep time: 5 minutes
  • Cook time: 20 minutes
  • Yield: Serves 2

Ingredients

  • 2 leftover jacket potatoes (cooked)
  • 500ml boiling water
  • 1 chicken/vegetable stock cube
  • 1 tbsp paprika
  • 1 tsp garlic powder (or 1 clove, cooked off)
  • 1 tsp onion powder (or 1 onion, softened)
  • 1 sprig rosemary, chopped

Steps

  • Peel the potatoes and break up into a saucepan with the water
  • Add everything else _except the rosemary) and bring to a simmer for 5 minutes
  • Blitz in a blender until silky smooth
  • Transfer back to the pan, and add water or simmer down to the viscosity you want
  • Sprinkle with rosemary, and season to taste
