Potato soup

This is really Nivi's Potaty Soop.

  • 2 leftover jacket potatoes (cooked)
  • 500ml boiling water
  • 1 chicken/vegetable stock cube
  • 1 tbsp paprika
  • 1 tsp garlic powder (or 1 clove, cooked off)
  • 1 tsp onion powder (or 1 onion, softened)
  • 1 sprig rosemary, chopped

Method

  1. Peel the potatoes and break up into a saucepan with the water
  2. Add everything else _except the rosemary) and bring to a simmer for 5 minutes
  3. Blitz in a blender until silky smooth
  4. Transfer back to the pan, and add water or simmer down to the viscosity you want
  5. Sprinkle with rosemary, and season to taste
