Slow Brioche Burger Buns receipt

Ingredients

  • 600g strong white bread flour, plus extra for kneading
  • 1½ tsp salt
  • 2 tsp fast-action dried yeast
  • 2 tbsp caster sugar
  • 100g unsalted butter, softened
  • 2 medium eggs, beaten
  • 50ml tepid milk
  • 225-250ml tepid water

Steps

  • Mix all the dough ingredients except the butter
  • Once the dough has come together, add the butter in small chunks until all is incorporated.
  • Let the dough rise for 2-3 hours till it has doubled in size
  • Knock back and shape into 12 balls
  • Put them on baking trays, 6 to a tray, cover with a damp tea towel and let rise for an hour.
  • Pre-heat the oven to 180C fan
  • Bake for 25 minutes or until they sound hollow when patted on the bottom.
