Slow Brioche Burger Buns receipt

  • 600g strong white bread flour, plus extra for kneading
  • 1.5 tsp salt
  • 2 tsp fast-action dried yeast
  • 2 tbsp caster sugar
  • 100g unsalted butter, softened
  • 2 medium eggs, beaten
  • 50ml tepid milk
  • 225–250ml tepid water

Method

  1. Mix all the dough ingredients except the butter
  2. Once the dough has come together, add the butter in small chunks until all is incorporated.
  3. Let the dough rise for 2-3 hours till it has doubled in size
  4. Knock back and shape into 12 balls
  5. Put them on baking trays, 6 to a tray, cover with a damp tea towel and let rise for an hour.
  6. Pre-heat the oven to 180C fan
  7. Bake for 25 minutes or until they sound hollow when patted on the bottom.
