- 600g strong white bread flour, plus extra for kneading
- 1.5 tsp salt
- 2 tsp fast-action dried yeast
- 2 tbsp caster sugar
- 100g unsalted butter, softened
- 2 medium eggs, beaten
- 50ml tepid milk
- 225–250ml tepid water
Method
- Mix all the dough ingredients except the butter
- Once the dough has come together, add the butter in small chunks until all is incorporated.
- Let the dough rise for 2-3 hours till it has doubled in size
- Knock back and shape into 12 balls
- Put them on baking trays, 6 to a tray, cover with a damp tea towel and let rise for an hour.
- Pre-heat the oven to 180C fan
- Bake for 25 minutes or until they sound hollow when patted on the bottom.
