Yorkshire Puddings

Just make sure the oil is as hot as can be!

  • 140g plain flour
  • 4 eggs (about 200ml)
  • 200ml milk
  • oil

Method

  1. Heat the oven to 210°C fan. Add oil to 12-hole non-stick muffin tin and place in the oven to heat through.
  2. Beat the eggs and flour until smooth
  3. Gradually beat in the milk until combined and lump free.
  4. Season!
  5. Pour the batter evenly into the tin and bake for 20–25 minutes until the puddings have puffed up and browned.

Notes

  • Do not open the oven door during cooking or the puddings may deflate.
  • The key to a good rise is smoking-hot oil before the batter goes in.
