Yorkshire Puddings

Based on this recipe by Barney Desmazery.

Just make sure the oil is as hot as can be!

  • Prep time: 5 minutes
  • Cook time: 25 minutes
  • Yield: Makes 12

Ingredients

  • 140g plain flour
  • 4 eggs (about 200ml)
  • 200ml milk
  • oil

Steps

  • Heat the oven to 210°C fan. Add oil to 12-hole non-stick muffin tin and place in the oven to heat through.
  • Beat the eggs and flour until smooth
  • Gradually beat in the milk until combined and lump free.
  • Season!
  • Pour the batter evenly into the tin and bake for 20–25 minutes until the puddings have puffed up and browned.

Notes

  • Do not open the oven door during cooking or the puddings may deflate.
  • The key to a good rise is smoking-hot oil before the batter goes in.
