Based on this recipe by Barney Desmazery.
Just make sure the oil is as hot as can be!
- Prep time: 5 minutes
- Cook time: 25 minutes
- Yield: Makes 12
Ingredients
- 140g plain flour
- 4 eggs (about 200ml)
- 200ml milk
- oil
Steps
- Heat the oven to 210°C fan. Add oil to 12-hole non-stick muffin tin and place in the oven to heat through.
- Beat the eggs and flour until smooth
- Gradually beat in the milk until combined and lump free.
- Season!
- Pour the batter evenly into the tin and bake for 20–25 minutes until the puddings have puffed up and browned.
Notes
- Do not open the oven door during cooking or the puddings may deflate.
- The key to a good rise is smoking-hot oil before the batter goes in.
